Ding, ding, ding! We have a winner! This is by far my best Rice Krispies Treats recipe this week. The simple addition, Junior Mints! Everyone in the house likes this recipe. Mint always reminds me of spring and Easter time – plus chocolate, well you can’t go wrong with that. So here is one I recommend you give a try!
After Dinner Rice Krispies Treat

- 3 cups Rice Krispies cereal
- 1 cup chopped Junior Mints (a mini food processor works great for this – just makes sure the mints are cool at least before starting)
- 1/4 tsp salt
- cooking spray
- 3 Tbsp butter
- 30 large marshmallows
Combine cereal, chopped mints, and salt in large bowl. Spray pan with cooking spray (small square pan would fit this 1/2 recipe). Melt butter over low heat, then add in the marshmallows. Stir constantly until completely melted. Now quickly pour into cereal mixture and mix. Spoon into pan and press down with waxed paper coated in cooking spray. Cool. Enjoy (especially after dinner).
