Costco         Pork Be Inspired

Today Hubby and I went shopping at Costco, it is a warehouse chain and I love browsing around there. Plus, today was sample day so we tried some good things – oh and we tried seaweed on it’s on which was not a good thing.

Did you know that Costco has a great meat department? They have a nice variety and the prices are lower per pound than my regular grocery store. October is National Pork Month and each week Costco is offering $2 off certain packages of pork.

Week of October 17: Tenderloin: This week, in honor of National Pork Month, get $2.00 off a package of pork tenderloin.  As a wholesome cut packing tons of flavors, ounce for ounce, pork tenderloin is as lean as a skinless chicken breast.

The tenderloin is actually one of my most favorite cuts to cook with. I find it really versatile and everyone seems to like it no matter what I make. Picked up a package today and this week I’m going to make a family favorite of Pork Tenderloin with Red Wine Gravy, Garlic Mashed Potatoes, and Roasted Green Beans and Shallots. (Go ahead and wipe the drool off your mouth now.) And yes, I will be posting the recipe and pictures this week so stay tuned. It is an easy recipe and delicious! You can make it for just your family, but it is yummy enough and plates so nicely that it is great for company also.

One of the biggest things people need to know about cooking pork is that you do not have to cook it so long that it is overcooked and dry. You only need to cook it to 145 degrees (ground pork should be 160). Cooking it to the right temperature will make such a huge difference in your finished product. Don’t worry if it is a little pink – the temperature is what you need to go by. If you do this it will be nice and juicy and taste so good!
