I love all those yummy appetizers and snacks everyone makes this time of year, but I am going to try to look for healthier appetizers this year. Even if I just substitute one healthy appetizer for one high fat/calorie appetizer a benefit is there – small steps. This is a recipe from Bumble Bee Foods and I thought it just looked so elegant for a holiday party even. This is easy to make too!

Salmon Stuffed Cucumbers

Salmon Stuffed Cucumbers

Ingredients:

1 can or pouch (5 oz.) Bumble Bee® Pink Salmon, drained and flaked
1 medium cucumber
3 tablespoons light mayonnaise
2 teaspoons finely chopped fresh dill
1 teaspoons finely grated lemon rind
Fresh ground black pepper to taste
Lemon wedges and dill sprigs

Directions:

Slice cucumber lengthwise; remove seeds. In small bowl, combine salmon, mayonnaise, dill and lemon rind. Add pepper to taste. Fill both halves of cucumber with salmon filling. Slice each half crosswise into 5 pieces. Garnish with lemon wedges and dill.

*Robyn’s notes – I’m not sure what size “medium” is, but around here are cucumbers are fairly large apparently because you would get far more than 5 cuts on each half for the ones I have seen. For that reason I would double the stuffing ingredients but still just use one cucumber and I think it should work out to the right quantities.
