On Thursday, February 2, I am going to be a part of the Cooking Connections class over at TheMotherhood. We will be talking game day and slow cooker recipes! Even if you are not into the big game this Sunday, you can still enjoy the live online event Thursday and learn some great recipe ideas.
I love using my slow cooker when we have a crowd at our house. It means that I can fix the main part of the meal in that ahead of time and not worry about it, plus I have a large slow cooker so I can feed a lot of people out of it. Even if I do not cook the main item in the slow cooker, it is great for just keeping it all warm for events like Super Bowl parties where people will be eating throughout the party.
- Chili and all the fixings!
The slow cooker is a great place to make the chili or to just keep it warm if you make it in a pot. If you are going to cook in the slow cooker you will still need to brown your meat in a regular pot first though. I’ve done this with my chili recipe and then just added the rest to the slow cooker and let it go. Along with the chili I serve hot dogs (my son and husband require this), elbow macaroni, pickled jalapenos, chopped onion, shredded cheese, Fritos, oyster crackers, regular crackers, and a variety of hot sauces like Cholula and Tabasco Sauce. I keep the main chili on the milder side when serving to a large group because not everyone likes it hot – just have sauces and sides for those who want the heat to add in on their own. This is always a hit with family and friends.
- Shredded BBQ – Pork or Beef
This is perfect for doing the day before. Just take your beef or pork roast in the slow cooker with whatever seasonings you want and let it cook slowly. When it’s done use two forks to shred the meat apart. Then add your favorite BBQ sauce into the slow cooker with the shredded meat. Super easy! I like to serve this with small slider sized buns plus sliced onion, pickled jalapeno, small slices of cheese, and sliced avocados for everyone to add as they please.
- Party Meatballs
Another favorite and super simple recipe. You can make this more complex if you like by making your own homemade meatballs and being elaborate with the sauce if you want. I happen to buy a big bag of frozen meatballs (no sauce on them already) and put them FROZEN into the slow cooker. Then I added a regular size jar of grape jelly and a regular jar of chili sauce – yes you heard me right. It takes a couple of hours for the meatballs to heat up and the sauce mixes together and is really very good – I promise!
- Sweet & Tangy Creole Mustard Chicken Wings
A huge hit with friends! This is my adaptation of the Zatarain’s recipe.
Chicken Drumettes (I used frozen – there were about 20 in the bag)
3 Tbsp Zatarain’s Creole Mustard
2 cups orange juice
1 cup honey
1/2 cup brown sugar
2 tsp Sriracha Chili Sauce
2 Tbsp Zatarain’s Creole Seasoning
2 Tbsp garlic, minced
2 Tbsp fresh ginger, minced
1 tsp soy sauce
Preheat oven to 375° F. Place the wings on a baking sheet and sprinkle with salt and fresh black pepper. Bake for about 20 minutes. While they bake, mix all other ingredients in a pot on the stove and reduce by half. At this point I put the wings and the sauce in my slow cooker and put them on warm and they were ready to go by the time the guests arrived.
