Chicken breasts are so versatile and easy to cook, but people get stuck in a rut with them. Not only a rut, but a lot of people I know end up eating this bland and very dry piece of meat. One of the problems is time. I am lucky to have a little more time to prepare dinner several days a week than others I know, but even I have super busy days. We are trying to cut back (out really) on eating fast food as a dinner alternative on busy days. Instead I need easy recipes and menus for those busy nights. One of my other hurdles is that my husband is not the biggest fan of boneless skinless chicken breasts. So I’m going to be working with Hellmann’s the next few weeks to help find some ways to change up my chicken recipes.
This week was really about finding a super quick and easy meal that everyone would like. We found it. I cannot believe this, but my husband said this was a “make again” recipe. SHOCK! He never says that about any recipe with boneless skinless chicken breasts. I had to agree, this was a very flavorful chicken dish and super easy to prepare.
BBQ Cheddar Crusted Chicken
Recipe by Hellmann’s
Prep time: 10 minutes (if that even)
Cost per serving $1.74
- 1/2 cup Hellmann’s Real Mayonnaise
I used Hellmann’s Light Mayonnaise – no need for a measuring cup even really, I just use a spoon and plopped some in a bowl for about 1/2 cup
- 1/4 cup shredded cheddar cheese (about 1oz)
Easiest is pre-shredded, but I shredded my own because it tastes better. Again, I didn’t measure, just eyeballed a good handful of it
- 2 Tbsp. barbecue sauce
No measuring again, just squirted about that much in the bowl – saving on dishes is a time saver for my family
- 4 boneless, skinless chicken breast halves
I used 3 because that is how many come in a package here and there are 3 people in my family.
- 4 tsp. Italian seasoned dry bread crumbs
I didn’t measure, I just reached in and used a good pinch of these directly onto each chicken piece.
Preheat oven to 425°. Mix the mayo, cheese, and bbq sauce in a bowl. Place chicken on a cookie sheet. Top each piece with the mayo mixture and spread over each. Sprinkle with bread crumbs. Bake 20-25 minutes until done. We use a meat thermometer to make sure our chicken is cooked to 165°. Enjoy! Full original recipe, nutrient info, and printable version here.
Like I said, Hubby said make this again. The topping does slide off a bit, but still very tasty. The chicken was very juicy and the topping really did give a lot of flavor to the chicken. Again, my purpose tonight was to save time. By not using all those measuring cups and spoons it saved a lot of time. For side dishes I saved lots of time by just using canned good. We had some baked beans and some Le Sueur peas (these are the only canned peas I buy). Super easy dinner to prepare and everyone enjoyed it.
