Sparkling Raspberry Lemonade Cocktail

This week’s 5 o’Clock Friday cocktail recipe had to be pink in honor of my new twin granddaughters! I’m going to toast to them with this Sparkling Raspberry Lemonade this weekend!

This recipe uses Santa Margherita Prosecco Superiore. Prosecco is an Italian sparkling wine and is fabulous to put those bubbles into cocktails like this one. It is generally less expensive than Champagne. I prefer it over Champagne for most drinks I make.

If you want a simpler version of this recipe you want to use the Prosecco and then you can also just use some pre-made lemonade and add the fresh raspberries. It will still be amazing! Heck, you could even use store-bought raspberry lemonade and add it to the Prosecco if you wanted. So basically what I’m saying is that if you add Santa Margherita Prosecco Superiore to just about anything it will be awesome!

Sparkling Raspberry Lemonade


  • 1 bottle Santa Margherita Prosecco Superiore
  • 1/8 cup sugar
  • 1/8 cup lemon juice
  • 1/2 tablespoon lemon rind, grated
  • 1 cup mashed fresh raspberries


Combine sugar and juice in a small saucepan, bring to a boil. Reduce heat and simmer for 1 minute, stirring until sugar dissolves. Remove from heat. Stir in lemon rind and ½ cup of mashed raspberries. Combine mixture and Santa Margherita Prosecco Superiore in pitcher. Sprinkle remaining raspberries among the glasses.
