Whole Grain Bulgur and Red Quinoa Salad Recipe

Today’s recipe is for whole grain bulgur and red quinoa salad which is perfect to make in a big batch for lunch during the week. I had been buying this pre-made from the deli at my grocery store but decided to try making some myself to keep the price down. It is actually a really easy salad to make, I just had to figure out ratios when I tried to duplicate it. This salad is both delicious and pretty darn healthy all at the same time. Whole grains are important for our bodies and I love many of them served in a cold salad like this. You could change up the bulgur and the red quinoa for any other grains you like as well since they all take on flavors very well in salads.

This recipe also allows you to add or remove other ingredients easily. So if you do not like cilantro, instead try flat-leaf parsley, if you don’t care for cucumbers just leave them out. The dressing can easily be changed to something else as well, but you should really try it as-is to start with and then adjust to your tastes. Other great things to add to this salad might be some feta cheese, Kalamata olives, red onion, edamame, pine nuts, or cherry tomatoes. Look what you have on hand and toss it in!

As I said, this will hold for several days in the refrigerator. Make a larger batch of it on the weekend and you can even divide it up into smaller portion containers and have it all set to take to work each day for lunch. If you have things like leftover chicken during the week you could add some of that to this salad the next day also. Lettuce wraps filled with this bulgur and red quinoa salad would also be a nice twist to change it up during the week. Pair it with a sandwich as well if you want something a bit heartier. For your next pot luck this would be a great salad to make ahead and bring to share with everyone. Don’t forget to write a small note with the ingredients if sharing at a gathering so those with special diets and allergies know what they are getting.

Whole Grain Bulgur and Red Quinoa Salad

  • 3/4 cups prepared bulgur
  • 1/4 cup prepared red quinoa
  • 1/4 cup garbanzo beans (chickpeas) (Canned is fine, just drain before using)
  • 1/4 cup finely shredded carrot
  • 2 Medium green onion, finely sliced
  • 1/4 cup finely diced red and/or yellow bell peppers
  • 1/4 cup diced English cucumber (You can use regular cucumbers, but I find the English variety are much easier to digest)
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon white balsamic vinegar (regular balsamic would also be okay)
  • 1/2 Medium juice from lemon
  • 1/2 Medium juice from lime
  • 1 teaspoon ground cumin
  • salt, to taste


Combine bulgur and red quinoa (prepared via package directions) in bowl. Add garbanzo beans, carrots, green onion, bell peppers, cucumber and cilantro. Toss well to combine.

In a small bowl or jar combine olive oil, balsamic vinegar, lemon juice, lime juice, and cumin. Whisk or shake well to combine.

Pour dressing over salad and toss well to combine. Taste and add salt, if desired, to taste.

Refrigerate for at least 30 minutes before serving.
