I love using the slow cooker, and other cooking tools, whenever I can to make my life easier especially on the holidays like Thanksgiving. The folks at McCormick have come up with four amazing recipes that will be perfect this Thanksgiving, or any day, that you can make right in your slow cooker.

If you are hosting Thanksgiving dinner and have to cook multiple things you know that we all seem to run out of stove-top burners and racks in the oven. Utilizing slow cookers frees up those spaces. You can even put them in another room if you need more electric outlets or counter space in the kitchen.

If you are a guest who is asked to bring a dish, doing so in a slow cooker will surely get you a hug from the hostess for the very same reason! Plus you can take that slow cooker home and wash it yourself at the end of the day to save the host one less dish to wash. They will surely be thankful!

All of these recipes are great if you are doing a Thanksgiving celebration at work before the actual holiday as well. Put everything in the slow cooker and take it to work and plug it in. By lunchtime (or whenever) it will be ready to go!

TIP: Be sure to use a label or write on a piece of tape and stick on the slow cooker base and lid to identify as yours in case there are multiples. It is also a nice idea to do a label or a sign card to set in front of what the dish inside the slow cooker actually is. One more bonus item, bring a serving utensil that is suitable for the dish, again marking your name on it, to make life easier for the hosts again.

Ingredients

  • 12oz cranberries, fresh or frozen
  • 2/3 cups sugar
  • 1 seedless orange, peeled and sectioned
  • 2 McCormick bay leaves
  • 1 McCormick cinnamon stick

Directions

Place all ingredients in 4-quart slow cooker. Cover. Cook 3 hours on high, stirring every hour. Uncover. Stir well. Cook, uncovered, 30 to 45 minutes longer on high or until slightly thickened.

Slow Cooker Oatmeal Apple Cobbler

Ingredients

Apple Filling

  • 5 Medium Gala apples, peeled, cored and thinly sliced
  • 1 cup brown sugar, firmly packed
  • 1/4 cup Bisquick (or other all-purpose baking mix)
  • 1 teaspoon McCormick ground cinnamon

Oatmeal Cobber Topping

  • 1 cup Bisquick (or other all-purpose baking mix)
  • 1/2 cup quick cooking oats
  • 1/2 cup brown sugar, firmly packed
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon McCormick ground cinnamon
  • 1 stick cold butter, cut into small pieces

Directions

Apple Filling
Spray inside of slow cooker with no stick cooking spray. For the Apple Filling, toss apple slices, brown sugar, baking mix and cinnamon in large bowl. Place in slow cooker.
Oatmeal Cobbler Topping
For the Cobbler Topping, mix all ingredients, except butter, in medium bowl. Cut in butter with fork until crumbly. Sprinkle over Apple Filling. Cover. Cook 3 hours on high.

Slow Cooker Sausage Stuffing

Ingredients

  • 1/2 stick butter
  • 2 cups chopped celery
  • 1 cup chopped onion
  • 1/2lb mild (sweet) Italian sausage
  • 1 cup chicken stock
  • 2 teaspoons McCormick rubbed sage
  • 1 teaspoon McCormick crushed rosemary
  • 10 cups cubed French bread, about 1" pieces

Directions

Melt butter in large skillet on medium heat. Add celery and onion; cook and stir until softened, about 5 minutes. Add sausage; cook and stir until no longer pink, about 5 minutes. Spray inside of slow cooker with no stick cooking spray. Add stock and herbs; stir to blend. Stir in bread cubes and sausage-vegetable mixture. Cover. Cook 45 minutes on high. Uncover and stir. Cook, uncovered, 30 minutes longer.

Slow Cooker Pumpkin Cake with Caramel Sauce

Ingredients

Pumpkin Cake

  • 1 box yellow cake mix (2 layer size)
  • 1 can pumpkin puree (15 oz)
  • 1/2 stick butter, melted
  • 1/4 cup milk
  • 2 Large eggs
  • 2 teaspoons McCormick pumpkin pie spice
  • 1 cup chocolate chips

Caramel Sauce

  • 1 cup brown sugar, firmly packed
  • 1/2 cup heavy cream
  • 1/2 stick butter
  • 1 teaspoon McCormick pure vanilla extract
  • 1/2 teaspoon McCormick pumpkin pie spice

Directions

Pumpkin Cake
Spray inside of 6-quart slow cooker with no stick cooking spray. For the Cake, mix all ingredients in large bowl. Pour into greased slow cooker. Place towel over slow cooker and cover with lid. Cook 3 1/2 hours on low or until cake is almost set.
Caramel Sauce
Meanwhile, for the Caramel Sauce, cook and stir all ingredients in small saucepan on medium-high heat 5 minutes or until sauce is smooth.
Carefully remove slow cooker insert and place on wire rack. Pour 1/2 of the Caramel Sauce over the cake. Let stand 10 to 15 minutes to cool slightly. Serve cake with remaining sauce and ice cream or whipped cream, if desired.
