Chicken Appetizer Recipes from Robyns.World made with #SandersonFarms chicken

We all have lots of recipes for chicken wings to serve as appetizers, but how about some new ways to use chicken in your appetizers and little bites? I’ve been working with Sanderson Farms (disclosure: I am compensated for my work with them) for a few months now and am happy to use their 100% natural chicken. While I love so many classic appetizer recipes, most of them are not the healthiest. By using chicken instead I can make them just a bit healthier but still incredibly delicious.

Hubby and I actually are not going out on New Year’s Eve, but when I asked him what he wanted to eat that night he still wanted all the yummy appetizers. I tried out three different chicken appetizers the other day as a trial run and we both loved them all. We will be having these along with several other finger foods to celebrate here at home. I’m sharing the recipes I made plus a few extra below that I didn’t make this night but I have made in the past.

You really can mix these recipes up and use the cuts of Sanderson Farms chicken that you like and add any extra spices or ingredients that you like or remove anything you do not like. There are no food police that will come knocking if you change things up to suit you and your family. Promise.

Chicken Rangoon

Here in St. Louis crab rangoon is super popular. Honestly, not all places even use crab in it, instead they use just the cream cheese filling and a few other ingredients. This is one of my favorite dishes but today I thought I would try making them at home with Sanderson Farms chicken instead of crab meat. Hubby and I were both really pleased in the flavor of what I came up with. I baked my chicken rangoon, but you could deep fry or air fry if you like as well.

Chicken Rangoon

Ingredients

  • 6oz chicken breast, chopped finely ((one breast or two small thighs))
  • 1 teaspoon corn starch
  • 1 teaspoon soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon vegetable oil
  • 8oz cream cheese, softened
  • 2 green onions, thinly sliced
  • 1 packet won ton wrappers
  • Cooking spray (if baking)
  • sweet and sour sauce of choice

Directions

Combine cut up chicken, cornstarch, soy sauce and garlic in a bowl and mix well. Set aside for 15-30 minutes to marinate.

Heat vegetable oil in very hot pan and then add chicken mixture and cook until done - this will only take a couple of minutes at most. Remove from heat and set aside to cool.

In a bowl combine softened cream cheese, cooked chicken mixture, green onions.

Won ton wrappers can dry out quickly so only pull out a couple at a time to work with. Lay the won ton wrapper down and using your finger brush plain water lightly onto all four edges, this will serve as the "glue" to hold the rangoon together. Place about 1 teaspoon of the chicken and cream cheese mixture into the center. Fold two opposite corners up to form a triangle and then fold the other two corners up to the top as well. Pinch together along seem. If you are baking or air frying the seal is not quite as important, but if you are going to deep fry be sure the edges are completely sealed so the filling doesn't come out while frying.

If baking, lightly spray the finished won tons with cooking spray.

I baked mine at 375° F for about 15 minutes. Just watch them as you bake. When baking they won't be all over crispy, but they will get brown and crispy on the tops especially.l

Serve with sweet and sour sauce, of your choice, for dipping.

Greek Chicken Skewers

We love the flavors of Greece and make Greek chicken all summer on the grill. For an appetizer I wanted to bring in some of those same flavors so I opted for a skewer with marinated chicken, feta cheese, olives and peppers. Look for a mixture of marinated feta, olives, and peppers in your grocery store deli to save lots of time and impart more flavor.

Ingredients

  • 1 chicken breast (or thigh) cut into small bite sized pieces
  • 1/2 cup Greek salad dressing (I use Kraft)
  • 1/4 cup feta cheese, cubed
  • 1/4 cup olives
  • 1/4 cup marinated peppers (yellow and/or red)

Directions

Cut chicken into small bite sized pieces. Place in bowl along with Greek dressing and toss. Marinate for at least 30 minutes.

Add chicken to hot pan and cook thru. You could also bake if you would prefer. The Greek dressing has oil in it already so you do not need to add extra oil to pan when cooking. Remove from heat and let cool a bit.

For the feta cheese, olives and peppers a super quick and easy "cheat" is if you can find this mixture already made at your grocery, look in the deli department. This is what I used. If you can't find it you should marinate the small cubes of feta, olives, and small pieces of peppers in Greek dressing as well.

Now thread an olive, piece of feta cheese, piece of cooked chicken, and pieces of peppers into a skewer (any order you like). Serve.

Mini Chicken Parmesan Bites

I love chicken Parmesan (although I prefer veal Parmesan actually). These little bites of Mini Chicken Parmesan really are easy to make and a sure fire hit for any crowd. You can use any red sauce that you like, homemade or store bought. I used a mixture of Italian cheeses that were pre-shredded to save time. You could also use a bit of fresh mozzarella and freshly grated or shaved Parmesan if you would prefer. Easily serve these on a platter or small plates with small appetizer forks or toothpicks for the guests to easily pick up and eat.

Mini Chicken Parmesan Appetizers

Ingredients

  • 1 chicken breast (or thigh) sliced thinly on diaganol
  • 1 egg
  • 3/4 cups Italian bread crumbs
  • 1/2 teaspoon granulated garlic
  • 2 tablespoons vegetable oil
  • 1 cup red pasta sauce of choice
  • 1/2 cup shredded Italian cheese mixture
  • 2 tablespoons vegetable oil (only if pan frying)

Directions

Cutting the chicken thinly is important here. Take the chicken breast and make a thin slice, not straight down, but at an angle. Each piece then should be gently pounded just once or twice with a meat flattener or flat side of meat tenderizer to make it thinner.

Add egg to shallow dish and mix well with a form. In another shallow dish mix bread crumbs and garlic.

Dip each piece of chicken into egg mix and then into bread crumb mixture.

If pan frying, heat oil and then fry the chicken pieces, it will only take a minute or two on each side since the pieces are so thin and small. You can also bake if you prefer.

Place cooked chicken pieces on baking sheet (I use a rack inside my cooking sheet) and then add about 1 teaspoon or so of the red sauce on the top. Now sprinkle a bit of cheese on each. Bake at 375° F for just a few minutes until cheese is melted and bubbly.

  • Buffalo Chicken Dip
    This was new to me but my DIL Caitlan wanted to make some to take to her family holiday party. It is very simple to make, one of those throw it all in type of recipes. Serve with toasted bread, celery sticks, carrot sticks or chips. You can make this in the oven and make for about 20 minutes at 350° or you can put into a slow cooker. Mix together about 2 cups of shredded cooked Sanderson Farms chicken, 8 ounces of cream cheese, half a cup of ranch dressing, half a cup of crumbled blue cheese (or cheddar cheese is great too), and half cup of your favorite hot sauce – we use Frank’s RedHot Buffalo Sauce.
  • Mini Waffles & Chicken with Spicy Maple Dipping Sauce
    This is a hot food item right now and so easy to make. I use frozen Eggo mini waffles. Instead of cooking them in the toaster I use the oven. For the chicken cut Sanderson Farms chicken breasts or thighs into bite sized pieces. Bread the chicken pieces by dunking in an egg and then into some seasoned panko bread crumbs. You can pan fry the chicken or bake in the oven – your choice. Top each waffle with a piece of the cooked chicken and serve with the spicy maple syrup which is just a cup of your favorite maple syrup mixed with 1/4 cup of your favorite hot sauce. Heat the sauce ingredients up and serve with the chicken and waffles for dipping.
  • Chicken Taco Cups
    Use either Sanderson Farms boneless, skinless chicken breasts or chicken thighs. You can do a small dice or mince even finer if you prefer. Cook with your favorite taco seasoning. Use Tostito scoop chips and place a bit of the cooked chicken in the bottom and top with a bit of salsa, shredded cheese, sour cream, guacamole, and any other taco toppings you like.
