I love grain bowls for lunch. However, to prep one each day is a lot more work and dishes. Instead, prepare all of your ingredients once a week. This way you can mix and match the ingredients throughout the week in just a couple of minutes and there are far fewer dishes to wash daily. If you aren’t familiar with grain bowls, you might just know them as cold salads. The can just be much healthier than those old fashioned cold salads that we grew up with that have lots of mayo, pastas, and other heavier ingredients. Instead you use healthy whole grains, fresh veggies, good proteins, and light dressings so you get a healthy meal that still fills you up.

Rather than a regular recipe, below you will find a list of options in different categories. Take a little from each to make your grain bowl. There is no right or wrong about what you can put with what, use things you like.


These all can be made in larger batches in one day, cooled, and then store in your large Rubbermaid BRILLIANCE container. Use package instructions for cooking. Often I add a bit of seasoning when cooking them to add a bit more flavor. You can use low sodium broths or add some spices and seasonings or even just large rough cuts of some vegetables like onions, carrots, garlic cloves, etc.   Use about 1/2 cup of prepared grains as a base for your bowl each day.

If you like a more traditional salad, add your favorite greens as a base first. Use a good handful or two of them. Even if you want it to still be more bowl than salad you can add smaller amounts of any of the greens. Don’t forget fresh herbs either as they pack a ton of flavor!

I generally use canned beans but more power to you if you want to fix them from dried. For canned varieties I look for organic and no or low salt. Drain and rinse the canned beans and store ready to go in your Rubbermaid BRILLIANCE. I use about 1/2 cup total (one variety or mixed) in my bowls.

  • chickpeas (garbanzo beans)
  • edamame (I use the frozen ones)
  • black beans
  • lentils
  • kidney beans

Beans and legumes are a great way to add protein and fiber to your grain bowls


A mixture of fresh and dried fruits and vegetables gives you lots of different textures and flavors. Again, I use about 1/2 cup total (mixed together) of this list. If you like veggies a little less raw you can chop and quickly blanch your veggies before packing them up on your prep day. If you are using dried fruits find ones with no extra sugars added.

  • red, yellow, orange, and green peppers

  • corn (I just cut raw fresh corn right off the cob)
  • artichoke hearts (if you buy jarred/canned – get ones that are packed in water only, not marinated)

  • grapes
  • raisins
  • pomegranate arils
  • diced pear
  • dried apricots
  • mango

Use plenty of fresh veggies in your grain bowls


This category you want to only use a tablespoon or two of in total. We all need some fats in our diet but it is better to have healthier fats. These fats can add a huge punch of flavor in small amounts.

  • feta
  • Parmesan
  • goat cheese
  • Asiago
  • Pecorino
  • Ricotta Salata
  • avocado
  • walnuts
  • pecans
  • almonds
  • peanuts
  • sesame seeds
  • pepitas (pumpkin seed kernels)
  • sunflower kernels

Healthy fats, like cheese and nuts, are great additions to your grain bowls


Make up an easy vinaigrette with oil and vinegar or just toss on other light varieties of juices, fresh salsas, sauces and such.

I don’t regularly add meats to my bowls, but you definitely can. This is a great use of leftover meats as well.

The possibilities are really endless. Find your basics to always have and then change up those extras from week to week based on what is in season or on sale. You can also heat these grain bowls up if you prefer something warm and they work great as a side dish at dinner also.
