These Chicken Jalapeno Quesadillas are quick and easy to make and sure to be a family favorite. They are great for a family dinner, snacks on game night or even for a crowd.

I suggest using a store-bought cooked rotisserie chicken but you can use any cooked chicken, freshly cooked or  leftover, as you like. Use all white meat, all dark meat, or a combination of dark and white. Just make sure to remove all the chicken skin and chicken bones.

Pickled jalapenos, found in jars, are less spicy than raw jalapenos. Use more or less as you like. You can add more heat with salsas for those in the family who like things spicier.

Monterey Jack cheese melts very smoothly which makes it great for quesadillas. However, you could also use Pepper Jack if you like things with more heat. Cheddar could also be used but it does not melt quite as well.

Make sure when you cook them that you get a nice crispy brown on each side.

Serve with toppings such as sour cream, salsa, and guacamole.

Chicken Jalapeno Quesadillas

Ingredients

  • 3 cups Shredded rotisserie chicken (or any cooked chicken)
  • 3/4 cups pickled jalapenos, chopped fine
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup corn
  • 1/3 cup chopped red onion
  • 1/2 teaspoon black pepper
  • 1 juice of a lime
  • 4 10" flour tortillas
  • cooking spray
  • sour cream, optional, to top with
  • salsa, optional, to top with
  • guacamole, optional, to top with

Directions

Mix chicken, jalapenos, cheese, corn, onions and pepper in bowl. Spread heaping cup of mixture over half of each tortilla. Fold tortillas over and press firmly to seal. Heat non-stick skillet over medium high heat. Spray with cooking spray and place 2 quesadillas in pan. Push down firmly or add weight (such as another heavy pan). Cook 2 minutes, flip over, and repeat cooking for another 2 minutes. Remove and keep warm while cooking remaining quesadillas adding more cooking spray as needed. Slice each into wedges. Serve with sour cream, salsa, and guacamole, as desired.
